Thinking.. How stressful it is to be the Maid Of Honor in your best friend’s wedding. Especially when she decides she wants to have her Bridal Shower and Bachelorette Party on the same day. This Saturday to be exact.. Sigh, so much stress.

Enjoying.. Planning the Bridal Shower and Bachelorette Party. I know, I know. I just said I was super stressed and I am! But I love planning trips and fun things and parties and I’m totally in my element right now. The stress is my kind of stress, it’s just what I do. I love this.

Feeling.. Stressed, as I’ve said. I’m a little anxious too and I don’t usually have a lot of problems with anxiety, so this alarms me a bit.

Wearing.. Black leggings from H&M, a loose grey tank top from TJ Maxx, a light pink/cream-ish colored knitted cardigan from American Eagle, and red fuzzy socks from my Grandma. It’s very late on Wednesday night (technically this morning) as I write this, so I’m all cozy and sitting on my bed.

Needing.. To get some sleep.

Wanting.. Some sleep.. And one of my chocolate chocolate chunk cookies from yesterday. SO. AMAZING.

Listening.. To Harry Potter and The Sorcerer’s Stone in the background. “Now I’m going to bed before either of you come up with another clever idea to get us killed, or worse – expelled!” Also, #OliverWood4President

Drinking.. Water with lemons. All day long. I don’t know what my deal is lately, but I’ve been going through at least a whole lemon a day, but a lot of days I go through 2. Somebody stop me.

That’s all for today, friends. As mentioned, I’m a little stressed and I have a few too many things going on at the moment. Also, I’m beyond excited for my best friend’s Bridal Shower and Bachelorette Party this weekend. Ahh, going to be so fun! … I hope, I think! Keep up with the fun by following me on Twitter and Instagram – @ChampagneLaced for both!

Oh, expect I will still be here tomorrow for a TV Friday. Specifically discussing McDreamy.

Love, love, love to you!

Chocolate Chocolate Chunk Cookies | Recipe

I did it. You lovely and adorable people, guess what! I did it.

I conquered my ridiculous baking fail and figured out the perfect recipe for THE MOST AMAZING AND RICH CHOCOLATE COOKIES OF LIFE. Big claim, but wow. They’re really good and really rich and really easy.  I also really like them a lot.

Directions and special notes below!

Chocolate Chocolate Chunk Cookies

1 Cup Salted Butter (at room temperature)
1 Egg
1 1/3 Cup Sugar
2/3 Cup Cocoa Powder
2 Cups Self-rising Flour
1-2 Large Bar(s) of Chocolate
2 Tbs – 1/4 Cup Milk **

** All of the pictures in this post are of the cookies I made WITHOUT any milk. I didn’t add milk until the 2nd batch, as an after thought and a test. They tasted mostly the same, but they spread out on the cookie sheets better. I would say to add as much milk as you need to make your cookie dough easier to work with and a bit stickier. I personally wouldn’t exceed 1/4 cup of milk, because this dough is intended to be quite thick and dryer than normal cookie dough.

Cream together your butter and sugar. Again, it is very important that your butter is room temperature. Soft, but not melted. Very important in the “creaming” of the butter and sugar step.

** Naturally, you could use a mixer and it would be a 100x easier, but there was something about using the wooden spoon that I was loving.

Add one egg.

Add your self-rising flour and cocoa powder. I highly recommend adding a little at a time, mixing, adding a little more, mixing, etc. Just makes less of a mess and things easier. Especially since this is a very thick, dry cookie dough.

**After you’ve adding ALL of your dry ingredients, NOW is when you add your milk. This will insure that you only add enough milk to loosen your cookie dough a little and not too much to make it too sticky or thin.

Break up chocolate bars of your choice and combine them into the cookie dough mixture. I chose a combination of bittersweet chocolate and white chocolate. I used 3/4 of each bar. Feel free to use less or more.

This recipe is intended to make 10 large cookies.
Because of the large chunks of chocolate bar, I prefer this large cookie style. However, the world in your oyster, so you can make 30 extra small cookies if you’d like or 3 giant cookies! You do you.

Roll your cookies into balls (10) and place into a preheated oven at 375 degrees on a baking sheet lined with parchment paper for 11-12 minutes.

When you remove the cookies (if you’ve made the large cookies), they will not be done. You’re going to want to leave the cookies alone for 20 minutes on their baking sheet before eating them. I’ve made several, several batches of these cookies now. This is the best method. If you insist on changing this part of the directions, don’t you be mad at me when your cookies aren’t wonderfully amazing like mine. *hair flip*

Now you can devour, eat, and love your cookies.
Share them with your friends though, because like I said.. These are rich! Deliciously rich chocolatey goodness.

Huge Baking FAIL!

It is really easy for a blogger’s life to seem “perfect” and wonderful and sometimes like we have it all together. Obviously because a lot of blogger’s don’t tend to broadcast their bad days or upsetting things on the internet, because it’ll be there forever. We all do it!

I don’t always talk about my bad days or my fails, but today, I’ve got one for you. Because REAL LIFE. Also because I had tears rolling down my face from laughter during this entire fail.

To cut to the chase, I tried to make cookies and it didn’t work.

The story goes like this – I watch a ton of British YouTubers (i just want to be british, guys!) and casually in one of Zoella’s vlogs from a while ago, she casually gave the ingredients and most of the measurements for these cookies. Now I’ve seen this exact cookie recipe on multiple vlogs from multiple different UK YouTubers and they looked delicious and everyone in the vlogs talked about how amazing these cookies were. Naturally, I had to try to make them.

Of course, the measurements that Zoe gave were all in grams. So I had to attempt to convert that into cups. I had some friends over and so we were all doing it together and it just turned into one hilarious disaster.

First, it needed 2 sticks (i think) of room temperature butter. Okay, cool. So while I was preheating my oven, I put 2 sticks from my fridge on top of the stove to soften up. Oh, and then we got distracted. So, my oven was on for almost an hour before we remembered we were supposed to be baking. I managed to salvage most of the butter, but it went past room temp and straight to melted. And also all over my stove.

I “creamed together” my melted butter and sugar.

Then I added my egg.

Then I added the, I think, right amount of cocoa powder, but I definitely think we added too much self-rising flour.

The dough was basically dry play dough. Honestly. Then we added the chocolate chunks. So next we made the big balls of dough and put them on parchment paper and put them in the oven.

The thing about Zoe’s directions was that she never told you how long the cookies needed to bake (at 200 degrees Celsius of course, so I had to convert that too). So we just turned the oven light on and decided to just watch them. Assuming that the balls would flatten and spread out some and then we’d know when they were done.

Ugh. Well, 25 minutes later we were like “what the heck, how are those cookies still not done?!” because the balls of dough still looked like the perfect balls of dough that we originally put in the oven.

So we took them out and.. Burned.
Burnt Balls. Burnt, crumbly balls.

Then we laughed hysterically for 20 minutes. Baking. Fail.

I do think I know enough about cooking and baking that I know what went wrong, so I’m attempting these again tonight! Come back tomorrow to see if I figured it out or not! If I did, then I’ll be including the recipe so you can make them too! If I didn’t, well..

Top 10 Sports Movies

I spent Friday-Sunday this past weekend heavily involved in some college athletics. On Sunday my coworkers and I started debating and arguing over our favorite sports movies. I discovered that I was very opinionated on the subject. So today I’ve gathered my thoughts and put together my Top 10 Sports Movies.

Buckle up.

10. Miracle

Does it get any better than a true story turned movie? Add in that it’s Olympic hockey and the USA beats Russia? I mean, it’s gold. …See what I did there?

“Who do you play for?”
“I play for the United States of America.”

9. Cool Runnings

Storytime: On my first day of high school I got up really, really early because I was so nervous and after I got ready I ate fruit loops (which i don’t even like) and watched Cool Runnings on TV. So I associate this movie with that day because that memory is so vivid for me! And it’s just a classic movie! So good and so underrated, to be honest!

8. The Mighty Ducks

I just love watching movies that has a coach with a rough past that doesn’t want to be a coach and a group of kids who just want to win and then everyone has to come together to be a big family and ugh, heart melt. Actually, I just LOVE the underdog storyline. Besides..

“Ducks fly together.”

7. Space Jam

It actually makes me laugh, because what in the hell was Michael Jordan thinking when he agreed to make this movie? It’s so odd and makes no sense, but I LOVE it and the story never gets old for me. Because I love that there’s the main storyline of the Looney Toons, but there’s also the secondary story of Michael and his kids and following dreams, etc. etc. Makes me smile.

6. Coach Carter

Film Title: Coach Carter.

I already told you guys, I love a good underdog story! I love that this movie is about SO MUCH MORE than basketball. All of the side story lines are almost more interesting to me than the main storyline and it has so many feel good moments. Also, this movie reminds me of my Senior Prom. Storytime for another day.

“You said we’re a team. One person struggles, we all struggle. One person triumphs, we all triumph.”

5. A League Of Their Own

I think this movie is SO important. It’s a great movie, with amazing actors, great lines, etc. But the STORY is so important to America’s history and that’s why people still watch and love this movie, because it’s more than a movie. I love it.

4. Hoosiers

Look, I’m from Bloomington, Indiana. The home of the Indiana University Hoosiers. So this movie is an important piece of my childhood and my life. No surprise here, but it’s an underdog story kind of movie and it’s just an instant classic. I think it really embodies what basketball means to the state of Indiana too, so I also direct outsiders to watch this and maybe get a glimpse of my life.

3. Remember The Titans

This. Movie. This movie is just FULL of powerful speeches and powerful lines and I just love them all. I could quote the entire movie to you, I always cry at the end, and I still get these odd excited butterflies in my stomach during the scene when Coach Yoast tells his defense to “You make sure that they remember forever, the night they played the Titans! Leave no doubt” (this scene right here! i’m obsessed). One of the big turning points in the movie and I love it every single time!

“Attitude reflects leadership.. Captain.”

2. The Sandlot

I mean, honestly, if you haven’t seen this movie then what are you doing here? Stop reading this blog right now and go watch this. Just stop. Any person who makes a list of their favorite sports movies and doesn’t have this in their Top 5 hasn’t ever seen this movie, so their list is disqualified. Yea, I said it.

1. Bull Durham

Not only the ultimate baseball movie, but the ultimate sports movie in the history of ever. My absolute favorite sports movie of LIFE. I wear my DVD copy of this out! It should go without saying that I can quote this entire movie, in fact, my family and I do, frequently! I can’t recommend this movie enough. YOU HAVE TO WATCH IT.

“This is a very simple game. You throw the ball, you catch the ball, you hit the ball. Sometimes you win, sometimes you lose, sometimes it rains.”

I had a really hard time narrowing down all of these into a Top 10, so here are the movies that just barely didn’t make the cut.

Honorable Mentions

Along with my Top 10 movies, which I obviously think you should watch, I also think you should watch these other 6. Because honestly, they all just barely didn’t make the list!

Do you agree or disagree with my list? What are your favorite sports movies? I dare you to make your own Top 10 Sports Movies list and then send it to me, so I can debate with you. Actually, that makes me really excited! Do it!

Love you!
